Anne's World Famous Banana Bread

I started baking when I was quite young and have enjoyed it for many years. I have been known to get up at 5am and start on a roll of baking. If you ever lived with me it was not uncommon to wake up to very pleasant aromas.....and lots of dirty dishes. I guess I could say that it is not only yoga that keeps me relaxed and calm! I have added my banana bread recipe for your enjoyment.


3 very ripe bananas

1/2- 3/4 cup of sugar ( depends on your sweet tooth as 1 cup was the original recipe)

1/2 canola oil or margarine, melted

2 eggs

1 1/2 cup of flour

1 tsp baking soda

1/2 teaspoon salt


Blend sugar and bananas and then add ingredients in order. Don't over blend, just until smooth. You can add chocolate chips, walnuts, fruit. Pour into either a greased loaf pan or greased muffin pan. Bake at 300 (the key to the banana bread). There is a fine line between under done and over done. Cook for 60-70 min for the loaf and 22-25 minutes for muffins. Enjoy!
